Our tips for preparation with a portafilter machine
To obtain a balanced espresso shot (double shot), we recommend the following parameters for preparation:
E61 brew groups
- Dose (In): 18.0 g coffee grounds
- Yield (Out): 38.0 g espresso in the cup
- Extraction time: 25 - 30 seconds
- Water temperature: 94 °C
Entry-level machines (e.g. DeLonghi Dedica)
- Dose (In): 11.0 g coffee grounds
- Yield (Out): 30.0 g espresso in the cup
- Extraction time: 21 - 24 seconds
- Water temperature: not adjustable
Entry-level machine with extra portafilter

Our organic coffee Marcello Sweet is an Arabica-Robusta blend. Nutty aromas and a pronounced sweetness play the main roles, with notes of apricot, hazelnut and malt.
The typical characteristics of Robusta give this coffee a high caffeine content, rich crema, and robust texture. For this blend, we use three coffees from India, Brazil, and Peru.
For the Robusta component, we chose a coffee from India. At 30%, it ensures that our coffee blend has a robust body and rich crema. The Beranagodu family in India produces the organic green coffee beans. We source them through Gollücke & Rothfos from Bremen, who have been buying directly from India for many years. This Robusta grows at an altitude of between 950 and 1250 meters and contributes to the robust body and wonderful crema of our coffee blend.
For the remaining 70% of the blend, we rely on Arabica. Brazil Dutra makes up 35% of this. It comes from the Matas de Minas coffee-growing region and also reaches us via Gollücke & Rothfos. Ednilson and Walter Dutra run the farm in the third generation, have organic certification, and rely heavily on photovoltaic systems to manage their electricity consumption independently. The lot we purchased for our Marcello Sweet consists of the yellow and red Catuai varieties and is processed naturally.
Another 35% of the blend is Peru Lima coffee from Lima Coffee. This association represents several hundred small-scale farmers from Peru. Since its founding in 2016, the living standards of its members and the quality of the coffee have significantly improved. Rony Lavan is the association's president and won the "Cup of Excellence" in 2017, the world's most prestigious specialty green coffee competition. Our Lot Peru Lima has a wonderfully sweet, maple-syrup-like flavor, a silky body, and a light fruity note of orange.
