Processing Method

Washed Processing

Washed processing is the most common form of coffee processing. The coffee cherries are placed in so-called depulpers directly after harvesting. This is how it works: ripe and unripe coffee cherries are pressed against a sieve in a rotating drum by centrifugal force. With the right pressure, the softer flesh (also known as pulp) of the ripe cherries is released and the beans waft through the sieve. The hard pulp of the unripe coffee cherries is not released and remains in the drum of the machine.

Catimor and Sachimor Varieties

Artificial introgression in coffee plants took off when the Timor Hybrid variety was discovered around 1920. On the island of East Timor, the genetic material of a Robusta coffee plant had naturally mixed with that of an Arabica plant. The result was the coffee variety known as Timor Hybrid, which is resistant to coffee rust. As the fungal disease caused some serious problems then and now, breeders quickly set about researching the Timor Hybrid further. They crossed it with various small Arabica varieties.

They had the best success with the bourbon-based varieties Caturra and Villa Sarchi. This is where the Catimor (Caturra x Timor) and Sarchimor (Sarchi x Timor) groups get their names from. As the Timor Hybrid variety already contains Arabica genetic material, this is also referred to as backcrossing.

Mexico is in the top 10 coffee producing countries in the world. In the southernmost North American country, coffee is mainly grown in the state of Chiapas, but the neighboring states of Oaxaca and Veracruz are also known for the cultivation of the crop. Due to the many elevations, the farmers primarily focus on growing Arabica coffee plants, which should ideally be grown at over 1000 meters above sea level.
