In our second edition of the "Curated by Champions" line, we present our coffee beans Ecuador Finca Soledad, which taste of elderflower, honey, and mulberry.
The green coffee comes from Finca Soledad in the Andean region of Ecuador, run by José "Pepe" Ignacio Jijón. In June 2024, we were in Copenhagen during our participation in the World Coffee Roasting Championships. Of course, we took the opportunity to explore the local coffee scene and visit various cafes and roasteries. A stop at April Coffee was a must. There, we enjoyed the special atmosphere with a wonderful hand-filtered coffee and had an intensive discussion about coffee. After a short time, we struck up a conversation with our table neighbors: Pepe and his son José, coffee producers from Ecuador. An exciting exchange developed about our respective perspectives on coffee – a conversation that left a lasting impression on us. Since then, we have met again and again at various coffee events. Finally, we asked Pepe if we could present and roast his coffee. We were all the more delighted that he agreed and placed his trust in us.
The Arabica coffee of the Sidra varietal is grown at 1515 meters, processed as Honey, and then dried with an extremely elaborate and controlled process. It spends up to 40 days in a darkened, climate-controlled room with dehumidifiers.
Pepe is a highly sought-after coffee producer who works with some of the best roasteries in the world. We are all the prouder to be able to offer you these special coffees. We thank Pepe for the trusting cooperation. For our "Curated by Champions" line, we store the green coffees frozen and roast them in small batches on our modern Roest coffee roaster to bring out the full potential of each coffee.
