Processing method

Natural Processing

In regions with little rain and water scarcity the “natural” preparation method works best. When using the natural processing the coffee cherries are dried directly after sorting—including the pulp. To do this, the workers spread them flat on large terraces or special coffee beds. They turn the cherries regularly and measure their moisture. This ensures that they dry evenly and do not rot. After the drying process, the pulp and parchment membranes are removed in a so-called dry mill using friction.

The bright red or yellow color gradually gives way to a strong brown and then changes to a color that is reminiscent of raisins.Taste wise natural processing promotes sweetness and fruity notes. A pronounced full-bodiedness is also characteristic. In contrast to other methods, the acidity tends to fade into the background with natural processing.

Coffee plant

Geisha Variety

Geisha (also known as Gesha) is arguably the most prominent variety of Ethiopian landrace (Heirloom) coffees. The plant is tall, has a relatively low yield, but outstanding flavor potential with average bean size. It plays a major role, especially in the specialty coffee scene, and was rediscovered in Panama in the early 2000s.

Since then, it has taken the coffee world by storm. At the most important filter coffee competition, the Brewers Cup of the Specialty Coffee Association, virtually only Geisha coffee is used. The prices for green coffee beans are many times higher than for beans of other varieties.

country of cultivation

Coffee from Costa Rica

Coffee cultivation plays a major economic role for Costa Rica, both historically and currently. The coffee plant was already the most profitable crop in the early 19th century, surpassing cocoa, tobacco and sugar. Thanks to exports, important investments could be made in the country's infrastructure. Since 2012, Costa Rica has also grown coffee from the variety Geisha which we explain in our article on coffee varieties. It comes from the Ethiopian landraces and is known for its outstanding taste potential and is in demand worldwide. With Dylan Aguilera, we have a direct contact to the origin. We got to know him at the World of Coffee fair in Athens in 2023.
