Our Costa Rica Finca Matilde coffee beans are fruity, with notes of baking chocolate, dried apricot and tropical fruits.
The green coffee comes from Finca Matilde in Costa Rica's West Valley, run by the Aguilera family for two generations. We met Dylan Aguilera in 2023 at the World of Coffee trade fair in Athens, where he was training with Aurore in preparation for the World Cup Tasters Championship. In 2020, he and his brother also won the prestigious Cup of Excellence.
A total of 12 siblings from the Aguilera family are responsible for the farm. They cultivate several varieties of coffee plants here and process them on-site to prepare them for export.
The coffee is grown at an altitude of 1550 meters and processed using the natural process at Finca Matilde. We import the green coffee directly through Dylan, who founded Aguilera Coffee Traders in 2022 to sell the family's coffees directly to roasters worldwide. We are thrilled to be able to roast this exceptional coffee.
