Unsere Kaffeebohnen Colombia El Yolombo schmecken fruchtig-süß mit Noten von Pfirsich, weißem Tee und Blütenhonig.
Der Rohkaffee stammt von der Finca El Yolombo in Anzá, Antioquia. Geführt wird sie von Liliana Ramírez, deren Geschichte uns besonders beeindruckt hat: Als Nikolai von Desarroladores De Cafe sie kennenlernte, hatte sie selbst noch nie ihren eigenen Kaffee probiert. Seit fast zwei Jahren unterstützt er sie nun bei der Vermarktung ihres außergewöhnlichen Chiroso-Kaffees. Durch den engen Austausch haben sie gemeinsam die Konsistenz der Trocknung verbessert und durch das „Floating“-Verfahren die Sauberkeit der Tasse maßgeblich gesteigert.
Die Bohnen wachsen auf 1850 Metern Höhe und werden in einem traditionellen „Washed“-Prozess verarbeitet. Da es sich um eine kleine Farm mit etwa 1.000 Kaffeebäumen handelt, wendet Liliana das Verfahren der „3 Cochadas“ an: Die Ernte von drei aufeinanderfolgenden Tagen wird jeweils separat gepflückt, nach dem „Floating“ am Abend entpulpt und schließlich am vierten Tag gemeinsam gewaschen. Diese Handarbeit und Detailverliebtheit machen diesen Kaffee zu einem echten Erlebnis.
Zu uns kommt der Rohkaffee über Nikolai Fürst von Desarrolladores de Cafe, was soviel wie Kaffeeentwickler heißt. Philip war ihn im Jahr 2023 besuchen, um sich vor Ort ein Bild über den Kaffeeanbau in Kolumbien zu machen.
