Processing Method

Pulped Natural Processing

In pulped natural processing, coffee beans are separated from the pulp in the depulper. Unlike washed processing, however, they are then dried directly - without being "washed off". As a result, mucilage remains on the bean, which dries along with it and influences the taste, placing pulped natural coffees somewhere between natural and washed processed coffees. The fruitiness and acidity is therefore often described in comparison to natural or washed coffees. The coffees are often characterized by a clear sweetness.

Bourbon Variety

Coffea arabica var. bourbon is known for its very good flavor potential, is tall-growing and produces coffee beans of average size. It was mainly cultivated on the island of La Réunion in the 19th century. The name Bourbon derives from the noble family of the same name to which King Louis XIII belonged. He ruled France from 1610 to 1643. At that time and until the 19th century, French settlers forced their slaves on the island to cultivate vanilla, sugar cane and coffee.

The well-known name of Bourbon vanilla also dates back to this time, when the island was the main exporter of vanilla spices. With the February Revolution of 1848, slavery was officially abolished on the island. However, sugar, coffee and vanilla continued to be cultivated and exported. Today, coffee cultivation hardly plays a role on the island.

Coffee from Brazil

Brazil is the the largest coffee producer and exporter of the world. In the largest South American country, over 3 million tons of green coffee are produced every year, a large part of which is used for export. The quality ranges from plain beans to specialty coffee, with producers competing in the Cup of Excellence competition. In fact, the first of these competitions took place in Brazil. Mainly Arabicas are grown in the country, but also coffee beans of this variety coffea canephora, better known under the name Robusta, are widespread. Most coffee grows in the State of Minas Gerais, in the southeast of the country.

We source many of our green coffee beans from Brazil via Luis and Niklas, the foudners of Ocafi. Mats visited them in spring 2022 to see where the coffee is grown at some of the farms. You can read more about Luis and Niklas here.
