Our Ethiopia Gara Sole coffee beans taste fruity and floral with notes of rose, peach and oolong tea.
The green coffee comes from the Gara Sole Washing Station in the Sidama region, located at an elevation of 2,200 meters in the village of Hamesho, Ethiopia. In 2024, our head roaster Philip Weller visited the washing station in Ethiopia. It belongs to Testi Coffee, a company founded by producer Faysel A. Yonis and his wife in 2009. The couple now operate over 20 washing stations in Ethiopia and produce coffees with complex flavors that delight us. The green coffee comes to us via Plotcoffee, a Hamburg-based company focused on sustainable specialty coffee.
The beans are grown in the area surrounding the Washing Station at approximately 2,000–2,200 meters and delivered from many small farms for processing. The green coffee, made from Ethiopian landrace varieties, is processed using the "natural" process. After a water bath, it rests for 30 days on shaded raised beds. This ensures the fruity flavor because the pulp of the coffee cherry remains attached to the beans during the drying process.
