Processing Method

Natural Processing

In regions with little rain and water scarcity the “natural” preparation method works best. When using the natural processing the coffee cherries are dried directly after sorting—including the pulp. To do this, the workers spread them flat on large terraces or special coffee beds. They turn the cherries regularly and measure their moisture. This ensures that they dry evenly and do not rot. After the drying process, the pulp and parchment membranes are removed in a so-called dry mill using friction.

The bright red or yellow color gradually gives way to a strong brown and then changes to a color that is reminiscent of raisins.Taste wise natural processing promotes sweetness and fruity notes. A pronounced full-bodiedness is also characteristic. In contrast to other methods, the acidity tends to fade into the background with natural processing.

A plant variety that has adapted very well to its environmental conditions over many years is called a landrace. In the coffee context, most landraces are found in the forests of Ethiopia, the country of origin of the coffee plant. The Arabica varieties from the country are generally characterized by a very high taste quality and lower yields. At the same time, they are more tolerant to diseases than many other Arabica varieties such as the widespread Bourbon and Typica varieties. The term Heirloom is also often used to describe these strains.

Ethiopia is considered the cradle of the coffee plant. The East African country is known for its landraces, often referred to as Heirloom. The origin of the first coffee plants are attributed to the Kaffa region. According to legend, a goatherd named Kaldi discovered the plant and its effects around 850 AD, when his animals appeared to him to be exceptionally energized after consuming the red fruits. The largest café chain in Ethiopia as well as several other cafés and roasteries worldwide bear the name Kaldi. Ethiopia is the largest African coffee producer and one of the largest producers in the world.
